Classic Mustang - 1966 Coupe - Restore to original??

I have a 66 coupe that I have been debating whether to restore to original or to what I like.

It is a C Code with an automatic. Console, A/C and front disc brakes with manual steering.

Originally Springtime Yellow with a white vinyl top and parchment interior.

I would rather restore the car with a red or blueish gray (or maybe a different color) and a black vinyl top and black interior with a 4 speed with no a/c and power steering.

What would you folks do? Restore to original or to what you like??
