If I understand you correctly the problem occurs when the throttle is pressed halfway or more. When the car shifts to 2nd it momentarily gets better but comes back. I'm not familiar with the Edelbrock carb but knowing carburetor principles and circuits I'd say the problem is in the power (also called "enrichment") circuit. On a Holley (I know Holleys) the circuit is controlled by engine vacuum and the more the throttle is pressed the lower the vacuum. While it's possible, even likely, the jets may be too small, if I were you I would start by finding the instructions for making the power (or enrichment) circuit deliver more fuel. Make one change at a time.
