I'm no expert, but you may have too large a carb.  We bought our 67 coupe 289 (40 over) with a 650 cfm.  We backed it off to a 550.  Try this CFM calculator to see what size you should have:

Original ignition? you need to upgrade it and then do a plug check to check the jetting in the carb.
