Try this one on for size.
My in-laws are driving down from central Illinois to spend the Holidays with us on the Gulf Coast a few years back. Somewhere around Memphis the oil light in his mid-80's LTD (5.0) comes on and stays on. The car is making a slight ticking sound but is running fine. He pulls over and checks the oil, no problems. Nice and clean and on the marks.
So he decides to finish the trip. The in-laws jump back in the car and finish the remaining 400+ miles across the great state of Mississippi.
They just happened to arrive a few minutes before I got home from work, so were already in the driveway and unpacking for the week. After exchanging pleasantries and such, I asked him how the trip went. He mentioned that it went well, the car was averaging 24mpg on the highway and oh, by the way, the oil light came on. Intrigued, I asked him to start the car. It starts right up and starts clicking away.. We shut the car right off and I feared the worst.
Checked the oil. looks good.
So, a quick change of clothes, and under the car I go. I am thinking oil pump or blockage somewhere in the system. Instead, what I found after pulling the pan and the pump was a two piece distributor driveshaft. It had broken off near the base of the distributor.
Relieved to find the culprit, installed a new shaft, buttoned everything back up and tested. Purred like a kitten, did not run hot, and decent oil pressure. I keep the shaft on my shelf of shame with the other odd and annoying things I have found over the years. The only thing I could figure was that the shaft was turning the pump, but not enough to keep good oil pressure.
Lucky, yes. Built Ford tough, OH YEAH!
Mahalo!!

It's a tribute to modern oils that you can fill an engine up with water and antifreeze as your daughter did and the oil kept the engine from seizing until the engine stopped. My guess is the engine stopped because the water wouldn't compress in the cylinders or it fouled the plugs to the point where it wouldn't run. Regardless of the cause, you're both lucky people.
