I run a 2.79:1 open gear now due to the fact that I am wayyyyyyyyyyy out in the country and with gas prices, the cost to go to all the cruizes and car shows in the bigger cities is just too dang much   I am building up a 9 in axle and have gone thru your same thought process.  A 3.00  or a 3.50 ??     Gas hit $4+ a gallon and I decided on a 3.25:1, just like the factories put in.  I expect to get a little less mileage per gallon, but a little better trip out of the hole...  I RUN  NOZ booster in mid-level gas and it runs fine, saving me money.  Every two months,  I give my rock-hard 351W engine a good drink of cold water  right thru the carb to clean her up a bit.   Will make her a little steam engine for an hour  lol.

Better for what purpose?

3:55 will launch quicker, but your mileage will suffer. 3:00 will have
better mileage and a higher top end, but you won't be as quick.

Which ever is more important to you... is 'better,' I suppose.
